Delaware Valley University Professor, Dr. Keith Ou, to Present Innovative Egg Nutrition Research at Cornell Nutrition Conference
Delaware Valley University is honored to share that Dr. Keith Ou, assistant professor of animal biotechnology and conservation, will present his research on egg nutrition at the Cornell Nutrition Conference (CNC), one of the nation’s leading gatherings for animal science and nutrition experts.
Dr. Ou’s presentation will focus on his work, alongside Dr. Lei of Cornell University, enriching eggs with DHA and Vitamin D, nutrients essential to human health, but often lacking in daily diets. By feeding hens diets enhanced with these nutrients, the birds produce eggs naturally rich in DHA and Vitamin D. When people eat these eggs, they receive the same benefits as if they had taken dietary supplements.
“Many people do not know that they are deficient in these nutrients,” said Dr. Ou. “By fortifying eggs through the hens’ diet, we can make a real difference in public health with minimal lifestyle changes.”
DHA, an omega-3 polyunsaturated fatty acid, supports cognitive development and plays an important role in anti-inflammation, while Vitamin D is essential for bone health and immune function. Many adults struggle to obtain sufficient levels of both nutrients and often rely on supplements or simply live with the deficiency. Dr. Ou’s research suggests that if farmers widely adopted this feed-based approach, consumers could naturally raise their nutrient intake through everyday foods.
Beyond improving egg benefits, Dr. Ou’s findings may pave the way for additional production animal usage to improve human health. Eggs were the basis and an ideal choice for the study due to their diverse types of lipids as both DHA and Vitamin D are lipid soluble compounds. In theory, however, this feed-based model could be applied to dairy and other animal products, as well as other nutrients necessary to support human health.
Dr. Ou is honored and excited to share his work at the Cornell Nutrition Conference. As a recent student at Cornell, Ou has spoken at CNC before, however, this will be his first time giving a presentation as an official speaker of the conference. Ou looks forward to the collaboration and discussion his research will inspire.
The Cornell Nutrition Conference brings together scientists, industry professionals and academics to discuss advancements in animal nutrition, feed efficiency and human health connections.
